Lomo Saltado (Peruvian-Chinese Asada Fries)
In the mid 1800s there was a huge migration of Chinese to Peru, about 100,000, to fill a need for labor after the slavery trade had ended. These people from China changed forever the landscape, but more importantly the cuisine of Peru. There is more eastern Asian influence in the kitchens of Peru than any other cuisine.
This dish is the flagship of Peru, by way of China!
